My latest favorite recipes

I haven't been cooking much lately (when hubby isn't home- what's the point?!) But then I end up eating lots of carbs... Just throwing some food down here and there.

So here are two of my favorite easy recipes that I love having in the fridge for a quick meal.


Chickpea salad (a vegetarian chicken salad option). I usually improvise, add some curry powder or some pomegranate seeds or chopped up dates instead of grapes. :) Great on some toast, in a wrap and paired with arugula, sprouts and avocado!

I also love this lentil meatloaf! Filling and healthy when I'm not in the mood for meat.
